Roasted Beet: Fresh beets, sliced thin and marinaded in fresh squeezed orange juice and balsamic vinegar, oven roasted until tender. P3 salad: Organic field greens dressed with P.R.I.'s vegan pesto and creamy vegan garlic white sauce, slivered red onion, pear, and hot herb roasted baby potatoes. (v) 10/14
